Spinach Omelette

Spinach OmeletteBRAIN-HEALTHY RECIPE:

 "B-Vitamins" are "Brain-Vitamins". They are central to protecting the brain from damage and disease. Rich sources include eggs and green leafy vegetables like spinach. Try this omelette to start your day with a brain-boost.

INGREDIENTS:

  • 2 eggs well beaten
  • 1 tsp MCT oil or coconut oil
  • 1/2 TBSP dehydrated minced onion or onion powder
  • Shredded baby spinach leaves
  • Heavy sprinkling of Old Bay Seasoning or desired seasoning

OPTIONAL:

  • 1 tbsp milk
  • Tomatoes
  • Cheese

COOK AS OMELETTE OR SCRAMBLED:

If as an omelette:

  1. Pour egg mixture into heated pan with oil
  2. Cook until underside is firm. 
  3. Sprinkle with onions and spinach leaves.

If cooking as a scramble:

  1. Pour in eggs
  2. Cook for a few seconds
  3. Add other ingredients.
