This curried split pea recipe is a true brain-healthy Mediterranean Diet dish. It is rich in MCTs from coconut oil and neuroprotective cumin spice. Here's to a healthier brain.
Ingredients
- ½ – 1 lb split peas 450 g
- ½ medium onion (chopped)
- 2 cloves garlic (crushed)
- 1 tbsp coconut oil 15 ml
- ½ tsp cumin 2 ml
- ¾ tsp salt 4 ml
- 1 tbsp yellow ginger 15 ml
Directions
- In medium sized skillet, put 4 cups water, add peas and boil until tender.
- Add more water if necessary.
- Blend cooked peas in blender on medium speed for 15 seconds.
- Return blended peas to pot.
- Chonko (sauté) onion and garlic in hot coconut oil.
- Add to blended peas.
- Season with cumin, yellow ginger and salt.
- Cook over low heat for 8 – 10 minutes.
- Serve with white rice.
- Accompaniment to the main dish.
